T Bone BBQ Tartare
- 1 T-Bone of 600-700g
- Steak spices from CHEZ BICEPS BBQ
- Oil for cooking
- 3-4 tbsp mayonnaise
- 1 chopped anchovy
- 3 tbsp chopped pickle (do not drain)
- 1 tbsp chopped capers
- 3 tbsp finely chopped gray shallots
- 3 tbsp chopped chives
- 1 tbsp brandy
- A few drops of Tabasco to taste
- Salt and pepper for finishing
Method:
- Season the beef and grill until rare, refrigerate immediately.
- Bone the meat and cut into small cubes of 3-4 mm. Refrigerate.
- Add the remaining ingredients and mix well. Make sure the mixture is cold at all times.
- Taste the tartare and finalize the seasoning to taste with salt and pepper.
- Eat immediately with croutons freshly toasted on the fire.
