T Bone BBQ Tartare

 

  • 3-4 tbsp mayonnaise
  • 1 chopped anchovy
  • 3 tbsp chopped pickle (do not drain)
  • 1 tbsp chopped capers
  • 3 tbsp finely chopped gray shallots
  • 3 tbsp chopped chives
  • 1 tbsp brandy
  • A few drops of Tabasco to taste
  • Salt and pepper for finishing

 

Method:

  1. Season the beef and grill until rare, refrigerate immediately.
  2. Bone the meat and cut into small cubes of 3-4 mm. Refrigerate.
  3. Add the remaining ingredients and mix well. Make sure the mixture is cold at all times.
  4. Taste the tartare and finalize the seasoning to taste with salt and pepper.
  5. Eat immediately with croutons freshly toasted on the fire.
