Any piece of meat that touches this solution bears the unique signature of Chez Biceps BBQ. Unique and powerful, it leaves no one indifferent.
Format: 275g - resealable sealed bag.
USE: For brining short ribs, chicken, bacon, smoked meat, etc.
The spices dissolve in the cold water and when brining, this water penetrates the meat carrying all the flavors to the center. When cooked, this water evaporates, leaving behind juicy and perfectly seasoned meat.
INSTRUCTIONS FOR USE
- Pour the contents of the sachet into 3 litres of iced water, mix well using a blender to melt the salt and mix the spices.
- Place the piece of meat in the cold brine. Place a weight on the meat to prevent it from floating (e.g. a plate). The piece of meat should be completely submerged. Add plastic wrap directly on the liquid. Refrigerate immediately.
- Do not stir during brining time. See brining times below.
- Removing the meat from the brine, rinsing it is unnecessary.
- Cook the piece of meat according to your wishes.
Highlights:
- For a whole brisket you will need 3 to 4 bags.
- For your smoked meat, we recommend our steak spices as a rub before smoking your brined brisket. The mixture is balanced with salt on purpose to fall into osmosis.
